Yesterday I made some of the kids' favorite Apple Bread for breakfast. I thought I'd share the recipe with you all here. The recipe below makes one loaf but I always triple it so we have enough for two breakfasts. Hope you have a great day!
Easy Apple Quick Bread
2 Granny Smith apples, peeled & chopped
1/2 c. butter or margarine
1 c. sugar
1 Tb. lemon juice
2 tsp. vanilla
2 c. flour
1 tsp. baking soda
1/4 tsp. salt
cinnamon sugar mix for sprinkling
Heat oven to 350º and spray the bottom of a bread pan with nonstick spray. Mix butter and sugar until smooth, then add eggs, lemon juice, and vanilla. Add flour, soda, and salt and mix well. Stir in chopped apples and spread in baking pan. Sprinkle with cinnamon sugar and bake 45-50 minutes or until done in the middle.
